I use 3 light mortars at the company level plus another 3/company at
battalion--that might be a little more than usual.

It's pretty unhealthy for infantry to be standing around in the open
when the mortars land around them, yes.  Get under cover, use EW to
interfere with the calls for fire support, shoot the observer.

Reloading is quick so you must mean resupply.  Mortar bombs for a light
mortar weight about 2kg each so you could carry quite a few in a
vehicle, unless by scenario design you want to limit it.  Manpacked
mortars would be limited, depend on how many guys you want to assign to
the crew.
