As a first-step on this project, I've put my Ariane V mods on my website:

This includes two scenarios, one lets you launch the Dragonfly to the ISS
in an oversized A5 faring. The dragonfly is 10 tonnes, so you have a
two-ton margin for launch error.
The second scenario uses a standard A5 (actually I should have used the
oversize, it doesn't *quite* fit) to launch a Module-I and Module-II
to the station that you've previously delivered Dragonfly. This one is
tight (both in terms of space and weight). A5 is only spec'd for 12 tonnes
to LEO, so you have very little margin for error, certainly try to get
the launch within 2 degrees of the target orbit, as the second stage
probably isn't up to changing inclinations.
Remember the multistage addon uses "f" to jettison the faring (use this
above 100km), and "j" to release the payload. The modules scenario will
need to you press "j" to release the module-II then "j" again to release
module-I. Only release the second one once the first is in place, else you
might not catch up with it!
I'll look into the fuel MFD on Sunday, with luck. If anyone wants to make
a 3d model of a fuel drone to stick atop Ariane (12 tonnes) or a smaller
on on another launcher, feel free! My modelling isn't up to much (take a
look at that faring!)
