For fighters, strikeboats and/or light ships, we could take a leaf out of the WW2 Luftwaffe's book with:

Wurger (Butcher bird)
Schwalbe (Swallow)
Sturmvogel (Stormbird)
Pfiel (Arrow)
Albatros
Greif (Griffin)

More generally, how about:
Wotan class -- vessels include Wotan, Donar, Loge, Tiw (to go with the Walkure class, naturally -- heavy and light cruisers respectively?)
Friedrich der Grosse (something big, obviously <g>)
Gigant (also something big -- perhaps a large transport class)
Zeppelin class -- Graf Zeppelin, Hindenburg, etc.

Or just plunder the 1918-9 issue of Jane's Fighting Ships in the German and Austro-Hungarian sections....
