How I fixed it for Outlook/Exchange
There is a MS patch that patches the mailer for internet mail
you must apply this first. It does things that makes the mailer
behave more like a unix internet mailer. and does things like
truncate lines and uses > for replies.
Remove the option that replies using RTF format, these
attachments are usually the RTF formatting information
from MS Mail. IIRC this is a per person option in your
address book.
Remove the option that uses MS word as the email editor that
is responsible again for formatting junk.
send a test mail to a tame netscape or other non MS mail user
to check its OK.
MS has a very MS centric view of Internet email
